Healthy vegetables & fruits benefits

Fresh food may seem pricey but nutritionists insist you can't afford not to buy fruit and vegetables regularly. With a wide range of vitamins, minerals, antioxidants and other compounds, they help protect the body against everyday and chronic health conditions.

"The more you eat the healthier you'll be," says Tania Ferraretto from Nutrition Professionals Australia. "I tell people to make sure there's some salad at lunch time, an extra serve of veg at dinner and replace one snack a day with fruit." Luckily, there are various options depending on budget and availability to boost the body's health.

Healthy heart

Cooked tomatoes are ideal Ferraretto says. "People often think they have to eat raw food but there's a really powerful antioxidant in tomatoes called lycopene that's more concentrated in cooked tomatoes than it is in fresh," she says. Other foods that reduce heart disease include guava, watermelon, green leafy vegetables (lettuce, spinach, Swiss chard, mustard greens), cruciferous vegetables (broccoli, cauliflower, cabbage, brussel sprouts, bok choy, kale), and citrus fruits (oranges, lemons, limes, grapefruit).

Cancer protection

Research shows that just adding one extra serve of fruit and veg each day can reduce your risk of head, neck and lung cancer, while red (lycopene-rich) foods prevent prostate cancer. And the more colour, the wider the range of cancer-fighting antioxidants. Try non-starchy vegetables like lettuce and other leafy greens, broccoli, bok choy, cabbage, onions, cauliflower and blue and purple foods like blueberries and eggplant. "And go for garlic, chilli, apples and anything with vitamins A, C and E like orange fruit and veg, citrus, berries, kiwi and red capsicum if it's raw," says Ferraretto.

Vision and age-related eye diseases

Fill your shopping basket with lots of dark green, leafy vegies. They contain carotenoids, which protect against age-related eye disease (one study showed that eating spinach and collard greens five times a week noticeably reduced the risk of macular degeneration). Also choose carrots for vitamin A and other bright foods like corn, squash, kiwi fruit and grapes.

Type-2 diabetes

"All non-starchy vegetables are good because they fill you up while providing minimal carbohydrates," says Ferraretto. You need small meals and regular snacks with plenty of leafy greens and legumes. "Things like beans and lentils are really good because they're very high in fibre, very slowly digested and absorbed, and provide protein." While starchy potatoes are usually out, she suggests sweet potatoes and Carisma, a low-GI white potato.

Obesity

A recent study at Boston University found what many health experts believe: a diet high in fruit and veg can help to prevent weight gain. Ferraretto supports these findings. "Half your plate should be leafy greens, carrots, non-starchy vegies and things like mushrooms, asparagus, broccoli, cauliflower and salad," she says. Opt for healthy, filling snacks like bananas, raw vegies and apples, and limit foods with healthy fats such as avocadoes.

Depression and stress

We often reach for comfort food when our mood slumps, but it needn't be fatty. "If you want something that's fulfilling and sustaining, go for legumes," says Ferraretto, "like a minestrone or veg and lentil soup where you're getting heaps of antioxidants and vitamins." High-folate and deeply coloured foods like spinach and berries, and high-fibre pears, apples and bussel sprouts may reduce irritability and mood swings.

Eating fruits and vegetables makes you look more attractive within six weeks


According to the research published recently in the American Journal of Public Health, carotenoids in the fruits are responsible for the healthy skin glow. Carotenoids are the red, yellow and orange pigments found in fruits and vegetables.

Lycopene, which is a carotenoid in tomatoes and red peppers, provides the red pigment. Beta carotene, which is a carotenoid in carrot and green leafy vegetables, provides the yellow pigment. These carotenoids deposit under the skin and provide several health benefits.

Beauty is linked to fruit and vegetable consumption

In this study, the scientists followed the dietary patterns of 35 students over a period of six weeks. The group did not use any make-up. They also did not get any significant UV ray exposure from the sun or self-tanning machines recently.

These students filled out food frequency questionnaires which provided scientists data around fruit and vegetable consumption. Potatoes were not counted as vegetables in this study.

They recorded the change in skin color and compared perceived attractiveness among these students.

At the end of the study, they found that students who ate more fruits and vegetables had a healthy golden skin. On the contrary, students who reduced the amount looked less attractive by the end of the study.

Skin tone becomes attractive with as little as three additional portions a day

You do not have to gorge yourself with lots of fruits and vegetables for a long period of time. Adding just two extra portions had a noticeable effect on attractiveness within a period of six weeks.

To be precise, eating additional 2.91 portions per day would make you look healthy. Eating additional 3.3 portions of fruits and vegetables would make you look attractive.

On average, one portion of fruit or vegetable is equivalent to 80g. For example, one apple, banana or orange will count as one portion.

Although this study focused on the link between the change in skin tone from carotenoids and attractiveness, previous studies showed that fruits and vegetables have several vitamins and minerals which improve skin health and slow down the aging process.

This study has some limitations because all of the volunteers in the study were Caucasian. So the scientists suggested that another study may be needed to determine if the effect is the same for non-Caucasians as well.

Lower your breast cancer risk with fruits and vegetables high in carotenoids



Women with high blood levels of the naturally occurring plant chemicals known as carotenoids have significantly lower risk of breast cancer, according to a study conducted by researchers from Brigham & Women's Hospital and Harvard Medical School and published in the Journal of the National Cancer Institute.

It has been well-established that a diet high in fruits and vegetables significantly lowers the risk of a wide variety of cancers, as well as providing a number of other health benefits. Often, the most colorful vegetables and fruits are among the healthiest, due to the pigments that they contain.

The carotenoids are pigments that give plans deep yellow, orange or red colors. They include alpha- and beta-carotene, lycopene, lutein and zeaxanthin. Foods high in carotenoids (particularly beta-carotene, alpha-carotene, and beta-cryptoxanthin) include carrots, sweet potatoes, tomatoes, winter squash, apricots, mangoes and papayas. Despite their color, green leafy vegetables are also high in carotenoids, particularly beta-carotene and lutein - the chlorophyll in their leaves merely masks the orange color beneath. Tomatoes, guava and pink grapefruit are also high in lycopene.

The researchers conducted a meta-analysis of the data from 8 separate studies on a total of 7,000 women - consisting of 80 percent of all published data on the link between carotenoids and breast cancer. In addition, the researchers re-analyzed all the original blood samples in order to standardize measurements of carotenoid levels.

They found that women whose blood was in the top 20 percent in terms of carotenoid levels were 15 to 20 percent less likely to develop breast cancer than women whose blood was in the bottom 20 percent.

"It looks like it is a linear relationship," lead author A. Heather Eliassen said. "The higher you go, the [lower] your risk is. There is some benefit at a moderate level of carotenoids and there is even more benefit at a higher level."
